Part 3: Marinated Cherry Tomatoes (side dish)

Serves: 2 servings
Ingredients:

  • 1 box of cherry tomatoes

  • 1/2 tsp of maple syrup

  • 1 tsp of apple cider vinegar

  • (Optional) Diced scallion greens for garnish

Directions :

  1. Bring a small pot of water (about 2 quarts) and blanch the cherry tomatoes in water for 1 minute, or until you start to see the skin crack on the tomatoes.

  2. Cool the tomatoes with cold water, then peel off the outer skin of the tomatoes gently. The skin should come right off, but the tomatoes should still be firm.

  3. Mix the maple syrup and apple cider vinegar with the tomatoes and garnish with scallions.

Cooking Tip:

Removing the tomato skin makes it absorb the marinade quickly - making this a quick side dish to serve up!
