Toasted Coconut Chocolate Chia Seed Pudding - 椰香巧克力嘉布丁

Serves: 2 servings
Ingredients:
1/2 cup of Chia Seeds
2 cups of water
1/4 cup of almonds or almond flour
1/4 cup of large toasted coconut flakes, or 1/8 cup of fine toasted coconut flakes
4 tbsp of Cocoa powder
Maple syrup to taste (1 tbsp is what I normally use but use 2 if you like yours sweeter)

Vitamix blender
Directions :
Add everything into the blender and mix on high for ~2 minutes until everything is smooth.

This smooth creamy recipe inspired by my friend Sandy’s idea of putting chia seeds in the blender creates a delicious pudding that could easily be mistaken for a far less healthy dessert. The perfect quick recipe for a healthy but decadent everyday celebration at home.
