Simple Rhubarb Almond tart
Prep time: 15 minutes
Cook time: ~30-60 minutes
Serves: 6 servings
Ingredients:
1/2 lb of rhubarb
1/2 tube of almond paste
1/2 gluten-free puff pastry dough (or home made pie dough/gf pie dough)
1 tbsp of butter
Optional: Sliced almonds for topping

Directions :
Cut the puff pastry dough in half and flatten (with a roller or your hands).
Flatten and add in 1/3 of the the almond paste on top of the dough.
Cut slits the rhubarb, about every 1/2 inch, across the entire rhubarb so it bends easily.
Create a circle of rhubarb on top of the pastry dough and almond paste, then fold the dough on top of the rhubarb.
Shave the butter on top of the rhubarb.
Heat the over to 400F, then bake for ~30 minutes
Top with sliced almonds and serve
Cooking Tip:
When picking out rhubarb, the redder ones tend to be sweeter, while the greener ones tend to be more tart.

I bought some GeeFree puff pastry dough, and made the mistake of not realizing how much oils (palm, canola, as the top ingredients) was in it until I made the pastry. The pastry turned out delicious, but next time I will either be using a frozen GF pie-crust, or making my own to try this recipe with again.
Rhubarb has a beautiful tartness to them. Delicious in desserts, key in using these will be not to accidentally add too much sugar/other sweet ingredients with them.
