Mango sticky rice - Quick Hack Recipe

Prep time: 5-10 minutes
Cooking time: <30 minutes
Serves: ~4 servings
Ingredients:

  • 4 mango (alfonso if available) or substitute with 4 cups of frozen mango chunks

  • 1 cup of sticky/sweet rice

  • 1/4 cup of mung beans/moong dal (optional)

  • 4 tbsp Coconut milk/cream powder with 1/4 cup of water (or sub with 1/4 cup of canned coconut cream).

  • Additional coconut cream to top (optional)

  • 1 tbsp of maple syrup / honey

  • 1/2 tsp of salt

  • Handful of coconut flakes to top (optional)

Cooking Tools:

  • Insta-pot / rice cooker

Directions :

1. Wash and soak the sweet rice overnight. (optional)
2. If you have a rice cooker, cook the rice and mung beans in it. (1
cup of rice is about 1.25 rice cooker cups, plus the mung beans I just
filled the water in between 1 and 2 cups). Otherwise, add 1.25 cups of
water into the insta-pot with the rice and mung beans and cook for 0
minutes, natural release.
3. Mix 1/4 cup of hot water with the coconut milk powder, honey, and salt.
4. Mix the liquid into the rice, stir, top with coconut flakes and
serve with diced mangos.

I had been receiving mangos in my imperfect / misfit produce boxes during the pandemic, and decided to try making one of my favorite desserts with them, which is where this recipe came from. I
love the mix of salty and sweet in Thai desserts, and the refreshing taste of mango in the nice summer heat. There are a lot of mango sticky rice recipes online, the difference with mine is I've modified mine to take a lot less time and effort + healthier w/less sugar and cream. Hope you enjoy it too!
