Prep time: 25 minutes
Serves: 2-3 servings
Ingredients:
1 lb of Brussels sprouts, washed and diced in half
1/2 tsp of paprika
2 tbsp of avocado oil
Balsamic vinaigrette seasoning:
1/4 tsp of salt
2 tbsp of balsamic vinegar
1 tbsp of extra virgin olive oil
Optional:1 tsp of smoked maple syrup
Cooking Tools:
Baking sheet
Oven
Directions :
Toss the brussels sprouts with avocado oil and paprika. Lay flat on the baking sheet lined with parchment paper, and bake on 350F for 15-20 minutes, or until the outer leaves begin to brown and you can easily poke through the brussels sprouts with fork.
While the brussels sprouts are baking, add all the balsamic vinaigrette seasoning ingredients into a bowl. Mix, and toss with the brussels sprouts when they’re done roasting.
Cooking Tip:
This is a great recipe for a sweet but healthy vegetable snack during the day, or if you get a sugar craving.
I’m mildly allergic so I didn't write it into the recipe, but black pepper also enhances the flavor of this dish.
Stay healthy with Annie:
In addition to being a delicious wintery treat, brussels sprouts are rich in minerals, are a good source of Omega-3, Vitamins K, C, A, and a mix of B vitamins, and they could reduce cancer risk. While I don’t roast most of my vegetables, I make an exception for brussels sprouts just because that’s the tastiest way to serve them up, and they’re great to add into my weekly rotation of vegetables during the colder months given the health benefits!
