Fresh Homemade Soy Milk

Freshly made soymilk

Cook time: 20 minute (plus soaking overnight)
Serves: 4 servings

Ingredients:

  • 1/2 cup of organic soy beans

  • 5 cup of water

  • 1 paper coffee filter

Cooking Tools:

  • Small pot

  • strainer

Directions :

  1. Soak the soybeans for 6 hours, preferably overnight in filtered water.

  2. Drain the soybeans. Add 5 cups of water and blend on high in a Vitamix/blender for 3 minutes till everything is smooth.

  3. Pour the raw soymilk into the small pot and cook on medium until it begins to boil (about 5 min), then turn the fire down and cook for another 10 minutes. Continuously stir the pot so the milk doesn’t boil over, while skimming the bubbles out.

  4. Turn off the fire, let cool, then drain over a strainer, then coffee filter.

  5. Serve with 2-3 tbsp of maple syrup.

Cooking Tip:

  • The milk boils over easily. Make sure you keep an eye on the pot.

Nutritious and Delicious:

There’s a lot of chatter on soy, and it can be difficult to decide whether to include soybeans in your diet. I in general stick with organic, non-GMO, non-processed soybean/tofu/miso/natto, (try to) practice everything in moderation. I personally appreciate the positive research on soy, and that the phytoestrogens in soy can can be good for your kidneys and reduce womens risk of breast cancer because tofu and soy milk is quite delicious!
