Simple Walnut crumble apple pie
Prep time: 20-30 minute
Cook time: 45-60 minute
Serves: 6-8 servings
Ingredients:
1 Gluten free frozen pie crust (I love the one from Trader Joes)
Pie filling
3-4 medium/large or 4-5 small/medium apples.
1/3 cup of tapioca starch
2 tsp of ceylon cinnamon (or 1 tsp of cassia)
Crumble
1.5 cups of walnuts chopped
1/4 cup of maple syrup
1/2 cup of gluten free 1 to 1 flour (you can also use buckwheat, sorgrahm, or rice)
4 tbsp of coconut oil
Cooking Tools:
Food processor (optional)
2 mixing bowls, one for the filling and one for the crumble
Directions :
Bake the gluten free pie crust according to manufacturer instructions.
Peel and core the apples. Depending on how you like the texture of your pie, you can slice the apple thinly, dice them into 1/2 in. cubes, or use the food processor to chop them into smaller pieces.
Mix the apple pieces with the tapioca flour and cinnamon thoroughly.
Chop the walnuts (or pulse in food processor) into small pieces.
Mix all the crumble ingredients together.
When the crust is done, fill the crust with the apple filling, then top with the crumble mix.
Bake at 350F for ~45-60 min depending on your oven.
Let the pie cool for an hour before serving.
Cooking Tip:
Use a pie crust protector if you have one, or you can wrap the pie crust rim with foil to avoid it from over cooking.
Also, depending on which pie crust you buy or if you make your own, this recipe can easily be made vegan.

Nutritious and Delicious:
Did you know one large apple can contain 25g of sugar - almost as high as a snickers bar? If you’re looking to reduce the amount of sugar in this pie, use granny smith apples instead of sweeter apples like fuji, and use less maple syrup. I often use 1 tbsp of maple syrup for the pie, or skip it all together when I’m making it for myself.
