Instapot Air Fryer Herbed Lamb Loin Chops

Cook time: ~30 minutes
Serves: 2 servings
Ingredients:
1~1.5 lb lamb loin chops
herb rub
2 tbsp of neutral/avocado oil
1 tsp of Italian seasoning / dried oregano / dried thyme
1/2 tsp of salt
1 tsp of ancho pepper for spicy, or sweet paprika for sweet
1 cup of parsley, loosely chopped
Cooking Tools:
Instapot with air fryer attachment.
Food processor
Directions :
Add all the ingredients for the herb rub in a food processor and blend until it has the consistency of a paste.
Rub the herb rub over the lamb loins.
Put the lamb into the Instapot airfryer for 325F for a 18 minute cycle. (Flip loins after 9 minutes). Increase temperature to 375F for a 9 minute cycle. Use the bottom and top rack so the lamb is not crowded and crisps up.
Cooking Tip:
This is an incredibly simple special-occasions recipe that works as an appetizer by itself, or along with vegetable sides and a baked/mash potato as a meal.
