Rich warm creamy goodness - Homemade eggnog with double-chocolate cookies

Serves: 4 servings

Ingredients:

Eggnog spices:

  • 1 tsp of ceylon cinnamon

  • 1/2 tsp of ground ginger

  • 1/2 tsp ground nutmeg

  • 1/8 tsp of ground clove

Eggnog

  • 1 cup of half and half

  • 1 cup of heavy whipping cream

  • 1/8 to 1/4 cup of maple syrup (more if you prefer sweeter, we used 1/8)

  • 4 egg yolks

  • 1/4 to 1/2 cup of gluten-free rum (more if you prefer more boozy, we used 1/4)

Cooking Tools:

  • Blender

  • Saucepan

Directions :

  1. Remove the egg yolk from egg whites.

  2. Add the egg yolk, rum, and maple syrup to the blender. Blend on low for 20 seconds to mix. (optional: Let this mixture rest in the fridge for a few days. This will result in a smoother eggnog)

  3. Add the cream, half and half, and eggnog spices into the saucepan. Bring the liquid to a gentle boil.

  4. Slowly add half a cup of the hot liquid into the blender. Blend for 5-10 seconds, then add in the remaining boiling liquid into the blender and then blend again for 30 seconds, from low to high.

  5. Let the eggnog cool in the fridge and serve!

Cooking Tip:

  • You can experiment replacing the rum with other high proof alcohols. Just make sure to reduce the maple syrup amount if you’re using a sweet liquor. (such as the lovely gluten free maple whiskey we found in Vermont!)

  • Make sure you’re watching the cooking process as boiling cream will quickly overflow the saucepan once it starts boiling.

I was previously hesitant to share a eggnog recipe out of safety precautions. So as a precaution to creating this recipe, I looked into:

  • What temperature water boils at (212F), and what temperature salmonella dies at (150F).

  • Whether the addition of alcohol and aging makes using raw eggs safer.

This recipe is created the way it is to decrease the likelihood of foodborne illness while still keeping it simple. (I absolutely must have eggnog, but also want to stay safe and am lazy!) I hope you get to enjoy some this holiday season!

Nutritious and Delicious:

Eggnog is definitely a decadent holiday treat with its creamy sugary goodness. But a simple homemade one means you can avoid a the refined sugars, additives, coloring, and adjust the alcohol and sweetness to your liking.

And while I wouldn’t advocate eggnog as a healthy daily routine, with this eggnog you will get a healthy dose of B vitamins (great for avoiding brain fog), vitamin A (antioxidants and helps your eyesight), and a mix of minerals e.g. calcium, manganese, zinc to keep you energized and running through the festivities.
