Simple Homemade Banana Bread
Prep time: 5 minutes
Serves: 8-10 servings
Ingredients:
3/4 teaspoon baking soda
3/4 teaspoon of baking powder
1 and 1/2 cup of almond flour
1/2 cup of coconut flour
2 tablespoons of coconut oil
6 eggs
4 ripe bananas, mashed
1/4 cup of nut/coconut milk/cream OR simply 1/3 cup of water
1 cup of chopped walnuts
(optional) 1/4 cup of dark chocolate chips
Cooking Tools:
Bowl for mixing everything together
Oven safe baking dish (we used a 9x6 in pan)
Directions :
Preheat your oven to 350°F
Using a fork, blend all the dry ingredients together. Add the wet ingredients together, blend well, and then mix them into the dry ingredients.
Either grease the baking pan with coconut oil/ghee or line with parchment paper. Add the batter to the baking dish.
Bake for 55 minutes or until the top is browned and a toothpick inserted in the middle of the bread comes out clean.
Cool, slice, and enjoy!
Cooking Tip:
Having made this recipe weekly for the past several month, I find it relatively flexible in terms of ingredients, e.g. when I have extra-large farmers market eggs, reducing the eggs to 5, or using between 3-5 bananas depending on the size of banana I bought that week. This flexibility also helps in reducing/adding additional sugars into the bread based on your preference (just remember to reduce the water/milk by 1 tbsp for every additional banana you add). A pinch of cinnamon also goes very well with this bread, although not so much turmeric!
