Learning to build resilience

I started to draft this post a few weeks back at the start of the lunar new year, the year of the snake. And what a time to reflect and look forward.

GF Deliciousness began in 2020, focused on how to eat healthy and gluten free (As opposed to unhealthy and gluten free you ask? Yes, most GF foods contain way too much sugar, seed oils, preservatives and refined starches!). I had swapped my life in the big city for quiet rural living in the North East, and thanks to the GF Deliciousness blog, living in a remote area, and plenty of free time being unemployed, I’ve learned to experiment and make so many recipes and dishes beyond my wildest dreams.

As the world opened up, I took away some lessons from the pandemic and in trying to become more resilient to supply chain disruptions (and inflation), took up gardening in 2022 after watching an entire winter of Youtube videos on tips and tricks and experimented with growing part of our winter vegetables indoors last year. I also went back to working full time, traveling a lot for work and took as much opportunity as I can to see family and friends in between. The past two years has been exhausting, but I’m also full of gratitude for every opportunity - if the pandemic has taught me anything, it’s to take nothing for granted.

Looking back in 2025 - I finally feel a lot more confident with our ability to not only thrive in the city, but also in the rural Northeast. If this was a video game, I’d say I’m probably level 90+ as a city dweller, but gaining confidence as a level 40+ country girl.

Since 2020, our new years resolution has been the same each year - don’t die (and thrive). Looking forward in 2025 - we’ve been living in a world with accelerated change and uncertainty for the past 5 years, and look to be continuing this trend for the next 5+ years. A bit daunting for sure, especially for a society that’s been growing more accustomed to the comfort and conveniences offered to us by modern technology. At the same time, if we pursue life as an adventure, then we can shift our outlook to one of anticipation, adaptation, and curiosity. If shifts the question from “why” to “how” - and opens up a world of possibilities. Similar to when I started the GF Deliciousness journey asking “how can I not miss my favorite foods while eating healthy + gluten-free?”, I plan to continue the GF Deliciousness journey in 2025 exploring new ways to answer more questions.

With that said, I plan to (try) and post more content while sharing things we’ve learned or are experimenting with to contribute to a more connected, and resilient healthy gluten-free lifestyle. I hope you’ll stay with me on this journey together!
